Tips for Brewing American Porter

  1. The grist for an American porter is normally some kind of American pale malt: domestic 2-Row. The core malt should make the grain bill up 70-90%. Use 0.5 to 0.75 pounds of dark grain in a 5-gallon quantity. Dark grains like black patent and chocolate malt.
  2. For the bittering addition, you should use American hops. Great bittering hops are Chinook, Northern Brewer, and Cascade.
  3. Use American yeast strain which is clean and neutral for having the best American porter. American yeast like Edinburgh Ale WLP028 and White Labs California Ale V WLP051 is a great choice.
