- The grist for an American porter is normally some kind of American pale malt: domestic 2-Row. The core malt should make the grain bill up 70-90%. Use 0.5 to 0.75 pounds of dark grain in a 5-gallon quantity. Dark grains like black patent and chocolate malt.
- For the bittering addition, you should use American hops. Great bittering hops are Chinook, Northern Brewer, and Cascade.
- Use American yeast strain which is clean and neutral for having the best American porter. American yeast like Edinburgh Ale WLP028 and White Labs California Ale V WLP051 is a great choice.
